Happy April Fools Day, here a little tasty trick that may be the best fool you see this April 1st! My Slimming World Meringue Raspberry Fool is a tasty dessert that is very easy to make and is completely syn free, but still delicious. As its only ingredients are eggs, sweetener, raspberries and Total 0% yoghurt I also believe it can be a tempting treat on a speed food day too!
To make one of these Slimming World Meringue Raspberry Fool’s you will need –
- Greaseproof paper
- Total 0% Yoghurt – 2 heaped large tbsp
- Sweetener
- Raspberries – Frozen or fresh
- 1 Egg
Duplicate this recipe depending on how many you are looking to make. The Slimming World Meringue takes roughly 2 minutes to prepare and 1 hr 10 minutes to cook. To finish the fool takes no longer than 3 minutes.

Here is a little video I made showing you how I made my Slimming World Meringue Raspberry Fool step by step.
To make Slimming World Meringue whisk 1 egg white until it forms soft white peaks. Add 4 tbsp of sweetener – vary amount depending on sweetener used and sweetness preference. Add spoonfuls of sweetener one at a time, whisking gently in-between each spoonful.
Heap onto a tray lined with greaseproof paper – be careful not to knock any of the air out and don’t spread the Slimming World Meringue too thin as it can easily flatten. Place in a preheated oven at 140° for 1 hr 10 minutes, checking on it every 15 minutes or so.
Once baked add your yoghurt to a bowl with 1 tbsp of sweetener. I layered my Slimming World Meringue Raspberry Fool in a mini ramekin but you could use a nice glass or mason jar. Begin with a layer of sweetened yoghurt and then, if you are eating it right away, a layer of broken meringue. If you are serving your Slimming World Meringue Raspberry Fool’s later only add meringue on the top just before serving.
Next layer your raspberries, I used defrosted frozen raspberries as you gave lovely juice from them and they are much cheaper at this time of year. Add a final layer of yoghurt, then raspberries again and finish off with the last of your Slimming World Meringue.
