I love puddings so much and knew I would have to give the Slimming world brownies a try after seeing a Slimming world friend make them. Here is my recipe for these beautiful Slimming world brownies that I have made just a little naughtier by adding Rolo’s on top. Mixed with Salted Caramel flavouring and salted caramel extract these gooey puddings are tempting but not too bad at 2.5 syns per dessert.

Preheat the oven to 180°C (slightly lower if a fan oven).
Place cases in a muffin or bun tin and spray each once with Frylight so stop the brownie sticking to the bun case.
Beat together the eggs, salted caramel extract, vanilla extract and sweetener with an electric whisk until light and fluffy.
Leave this mixing and combine the dry ingredients, your self-raising flour, sachets of salted caramel Options hot chocolate and cocoa powder.
After gently fold in the flour, Options, and cocoa powder mixture and combine together thoroughly.
Divide the Slimming world brownies mixture equally between 20 cases and put in the preheated oven for 5 minutes.
After 5 minutes pull the tray out and gently press a Rolo into the top of each brownie. The mixture will still be soft so don’t push them all the way down.
Once each brownie has a Rolo added to the top bake the desserts for another 5 minutes.
Take them out and enjoy these sticky, delicious Slimming world brownies hot or cold.
I also made up a batch for my sister who is gluten-free swapping out the self-raising flour for rice flour and xantham gum which worked very well.
